Canning with my Mommy

Last December, I received a canner.  I feel bad that I can't remember if it was my birthday or Christmas, but it's sat in my basement, not getting used, since I got it.  My mom encouraged me to get it out and stock up on chicken so we could can together while she was in town.

We did some leg parts, which were a big job of cooking and deboning/cleaning before canning could begin, then did some simpler-style chicken breast.  It was all a big learning experience to take in!

It's all blurry and the lighting's weird, but that's what I get for asking my five-year-old to take the picture.  And it's the only one I've got of us together from her time here, so I'll take it. :)

First batch, dark meat.

Second batch, breast meat.

Happy, proud me, with some finished jars in the background.  Also in the background there is one of my Puerto Vallarta souveniers.  That dish comes apart to one large platter and six odd-shaped bowls and was out because it got a little broken in our travel home and got some TLC that morning.

Besides the chicken, we decided to do a third run in the new canner, a batch of chicken broth from all the cooked chicken we'd done.  So proud of my chicken shelf in my pantry!
